If I wanted covers I'd be going to watch Morgans every which way.

Another of my all-time favourites is Robert Wyatt's version of (Elvis Costello's) Shipbuilding. It's a great modern folk song, and Wyatt's lugubrious vocal does it absolute justice.

p.s. Latteman - I'm with you. Brilliant song and Cher shouldn't have been allowed anywhere near it.

Well as we are being limited to only one then it has to be

Album - Belly of the Sun - Artist - Cassandra Wilson - Song - Witchita Lineman

This is in my view a real cover in that it is a very different version to the original but stands up on its own merit.

Worthy mention which would be my second choice

Album - The Church with one Bell - Artist John Martyn - Song - Glory Box

John at his achingly beautiful best guitar ppalying is perfect and that slow dark slur just delivers.
