I was once told that the Italian cold meat "morto della" was colloquially, if not literally, known as dead donkey. This was on the Amalfi coast.

Apparently Bolognan Mortadella can contain "some" donkey.

In Russia, a very similar product is called "doctor's sausage" (Russian: «Докторская» колбаса). However, this product is normally made from a beef and pork mixture, and does not include pieces of fat or myrtle as a primary spice, being instead flavoured with just coriander and nutmeg. It also traditionally contains eggs and milk, usually absent in traditional mortadella. There are sausages with pieces of fat called "Lubitelskaya" (Russian: «Любительская») and "Stolichnaya" (Russian: «Столичная»). http://en.wikipedia.org/wiki/Mortadella
