The old Hitachi HT-350 may well have come supplied with an Audio technica VN87D cartridge so it could be one of those? If it is this series you could try a replacement stylus with one of the higher up the range elliptical profiles? Good uni-torque motor in those Hitachi decks.

Will it work? How technical do you want to get? S/PDIF is designed to meet IEC61937 and this calls for 75 ohm termination. You try finding a phono connector with 75 ohm characteristics as the dimensions of the connector do not allow true matching (Canare may be the closest phono available). However ...

The EMT 950 ad is a scam. Not sure about the other one you linked to but I would urge caution. That 950 in the first link was sold in London last year with serial ending in ...25 and the scammer is using the exact same photos and text.
